5 Books to Read this Month: September 2024

5 Books to Read this Month: September 2024

by David Klemt

Flipping through an open book

Our September book selections focus on the 2024 Spirited Award finalists and winner of the Best New Book on Drinks Culture, History, or Spirits category.

These books cover an array of topics, from mastering ice and drink ratios to foraging for botanical cocktail ingredients.

To review the book recommendations from August 2024, click here.

Let’s jump in!

Juke Joints, Jazz Clubs, and Juice: A Cocktail Recipe Book Cocktails from Two Centuries of African American Cookbooks

Toni Tipton-Martin’s book has earned not only a Spirited Award, it’s a James Beard Award nominee, and has been hailed as one of the best cookbooks of the year by several publications. The story of the impact of Black drinking culture on drinking culture as a whole is told through more than 70 recipes.

From Amazon:Juke Joints, Jazz Clubs, and Juice spotlights the creativity, hospitality, and excellence of Black drinking culture, with classic and modern recipes inspired by formulas found in two centuries’ worth of Black cookbooks. From traditional tipples, such as the Absinthe Frappe or the Clover Leaf Cocktail, to new favorites, like the Jerk-Spiced Bloody Mary and the Gin and Juice 3.0, Toni Tipton-Martin shares a variety of recipes that shine a light on her influences, including underheralded early-twentieth-century icons, like Tom Bullock, Julian Anderson, and Atholene Peyton, and modern superstars, such as Snoop Dogg and T-Pain.”

How to Taste: A Guide to Discovering Flavor and Savoring Life

Tasting, whether food or beverage, is a key component of any hospitality professional’s skillset. To help people get the most out of tasting—and to make it a less-intimidating process—Mandy Naglich has written How to Taste. There are under 100 people with the Advanced Cicerone certification, and Naglich is one of them. I’d say, then, that she’s well qualified to teach others how to maximize a tasting.

From Amazon: “Take a seat beside highly-trained cheese analysts, world-class sommeliers, competitive whiskey tasters, internationally recognized chefs, and sensory scientists as experts divulge the secrets to discerning the notes in a range of ingredients, from a dab of honey to a spoonful of olive oil—and even a sip of mineral water.”

ICE: From Mixed Drinks to Skating Rinks–a Cool History of a Hot Commodity

This may seem like a strange thing to say, but ice, as a commodity, has been “a thing” in America for not much more than 200 years. I think it’s safe to say that it’s also something we tend to take for granted. After all, it’s just frozen water, right?

From Amazon: “In Ice, journalist and historian Amy Brady shares the strange and storied two-hundred-year-old history of ice in America: from the introduction of mixed drinks “on the rocks,” to the nation’s first-ever indoor ice rink, to how delicacies like ice creams and iced tea revolutionized our palates, to the ubiquitous ice machine in every motel across the US. But Ice doesn’t end in the past. Brady also explores the surprising present-day uses of ice in sports, medicine, and sustainable energy—including cutting-edge cryotherapy breast-cancer treatments and new refrigerator technologies that may prove to be more energy efficient—underscoring how precious this commodity is, especially in an age of climate change.”

The Maison Premiere Almanac Cocktails, Oysters, Absinthe, and Other Essential Nutrients for the Sensualist, Aesthete, and Flaneur: A Cocktail Recipe Book

Since opening its doors for the first time in Brooklyn, NY, in 2011, the Maison Premier has established itself as one of the most important and influential drinking and dining establishments in America. One can argue quite easily that it’s considered one of the best bars and restaurants in the world. The Maison Premiere Almanac features 90 cocktail recipes, and it’s a James Beard Award nominee along with being a Spirited Award finalist.

From Amazon: “As captivating as the bar itself, The Maison Premiere Almanac is both a visual delight—drawing on photography, illustration, and graphic design—and a detailed guide to the rarefied subjects that make Maison Premiere unique, including deep explorations into the art of the cocktail and cutting-edge bartending techniques and equipment.”

From Amazon: “This informative and conversational book is the perfect read for aspiring or seasoned bar, pub, lounge, or even restaurant owners, operators, and managers looking for that competitive edge in operations! Tales of the Cocktail Foundation is partnering with Children’s Hospital New Orleans to raise much-needed funds, and they want your help.

All proceeds this dynamic duo raise via people’s generosity will benefit TOTCF and CHNOLA directly.

By now, you know Tales. While we all look forward to their annual gathering of the bartender community, Tales works all year to advocate for and support hospitality. However, you may be unfamiliar with CHNOLA if you live outside of Louisiana.

Like TOTCF, CHNOLA is a non-profit organization. Next year, the pediatric acute care children’s teaching hospital will celebrate its 70th anniversary. Perhaps unsurprisingly, CHNOLA operates in affiliation with the Louisiana State University Health Sciences Center. In operation for nearly 100 years, LSU Health is home to several key medical schools, and patient care clinics.

Serving those who are just days old to 21 years of age, CHNOLA is a crucial member of the New Orleans community. In fact, as the only children’s hospital in the LCMC Health network, CHNOLA serves not only NOLA, not only the state of the Louisiana, but the entirety of the Gulf Coast region.

Supporting TOTCF and CHNOLA is rewarding in and of itself. But doing so via the dedicated link below will enter one winner per raffle (there are two) for two suite tickets for the Taylor Swift Eras concert being held on October 26 in New Orleans.

You’ll find more details below. Good luck to all who give and enter, and cheers!

TALES OF THE COCKTAIL FOUNDATION ANNOUNCES TAYLOR SWIFT ERAS TOUR TICKET RAFFLE

Two sets of two (2) suite tickets to be raffled off to benefit Tales of the Cocktail Foundation and Children’s Hospital New Orleans

NEW ORLEANS, LA (August 22, 2024)—In support of Tales of the Cocktail Foundation’s (TOTCF) mission to educate, advance, and support the global hospitality industry, the non-profit is thrilled to announce that they are in their fundraising era alongside Children’s Hospital New Orleans (CHNOLA) to raffle two sets of two (2) suite tickets to Taylor Swift’s October 26 Eras concert in New Orleans. Two separate drawings will be held–September 13 and September 20–each selecting one winner to receive a set of two (2) suite tickets for each raffle. All proceeds will directly benefit TOTCF and CHNOLA, additional details and a link to purchase tickets may be found on the dedicated raffle page.

“Following our wildly successful annual Tales of the Cocktail® 2024 conference, we couldn’t be more honored to partner with Children’s Hospital New Orleans on this fun and impactful fundraising effort,” said Tales of the Cocktail Foundation CEO Eileen Wayner. “We are thrilled to welcome Taylor Swift to the Crescent City with New Orleans’ globally recognized hospitality, and send two lucky raffle winners and their guests to enjoy her show.”

“We are incredibly grateful to Tales of the Cocktail Foundation and all of the many raffle participants for choosing to support the vital mission of Children’s Hospital New Orleans. Your generous support helps us care for every child in our community, including some of our most vulnerable,” said Lucio A. Fragoso, President and CEO, Children’s Hospital New Orleans. “Each chance to win helps us continue to provide expert pediatric healthcare for every child, regardless of the family’s ability to pay.”

Drawing Dates:

Raffle 1 – September 13, 2024 at 2 pm CST

Raffle 2 – September 20, 2024 at 2 pm CST

The raffle is conducted by TOTCF, operated under Louisiana Gaming License No. L0010538.

Cheers to the 2024 Tales Catalysts!

Cheers to the 2024 Tales Catalyst Honorees!

by David Klemt

Please join us in congratulating this year’s Tales Catalyst honorees, announced this week by the Tales of the Cocktail Foundation.

In addition to unveiling the 2024 Tales of the Cocktail agenda, and revealing the top four Spirited Awards finalists, Tales is recognizing two industry leaders as Tales Catalysts.

Becky Paskin, an award-winning whisky journalist, consultant, and presenter, and chief curating officer for Pictures and Cocktails LLC, Keyatta Mincey Parker, are this year’s honorees.

Both Paskin and Mincey Parker are being recognized, in large part, for their commitment to community, inclusivity, equity, and innovation. That’s to say nothing of the education they provide to others in the industry.

To learn more about Paskin and Mincey Parker, including their contributions to the industry, please review the official press release below.

Cheers!

TALES OF THE COCKTAIL FOUNDATION ANNOUNCES TALES CATALYST HONOREES

Tales of the Cocktail Foundation names Becky Paskin and Keyatta Mincey Parker as this year’s Tales Catalysts, continuing a 12-year tradition of championing leading industry members who represent marginalized groups and foster meaningful change within their communities

NEW ORLEANS, LA (June 26, 2024) — Tales of the Cocktail Foundation (TOTCF) is pleased to announce the 2024 Tales Catalyst honorees, recognizing members of the cocktail community who are elevating the industry to greater heights. The 2024 International Honoree is Becky Paskin and the U.S. Honoree is Keyatta Mincey Parker, presented by Diageo Bar Academy. Tales Catalysts reflects a more inclusive and intersectional space for recognizing and celebrating leaders in the industry, solely for their contributions to making the drinks industry a more inclusive space – without barriers of gender or identity. Tales Catalyst, in partnership with SevenFifty Daily and Beverage Media (Provi publications), the official Tales Catalyst media partners, will take place during Tales of the Cocktail® on Tuesday, July 23 at 3:00 PM, at The Ritz-Carlton New Orleans. The event will feature speeches by the honorees followed by a cocktail hour, with this year’s honorees speaking to their unique vision and personal efforts in fostering inclusivity in the drinks industry.

“I am overjoyed to see these new Catalyst Award recipients being honored at Tales of the Cocktail,” said Catalyst Co-Chair Tiffanie Barriere. “Their innovative contributions and consistent dedication to advancing the cocktail and spirits industry set them apart as true pioneers. Each recipient has demonstrated an exceptional ability to inspire, educate, and elevate our community, making profound impacts through their creativity and commitment. Their recognition is not only well-deserved but also a testament to the future and innovation of our craft.”

This year’s honorees were selected from a pool of over 100 qualified applicants and carefully chosen by Tales Catalyst Committee Members.

“Our two honorees are the definition of community builders. Each a Catalyst in their own way,” said Catalyst Co-Chair Robin Nance. “Keyatta has created and cultivated a space for her community and continues to expand and elevate what is possible. Becky took her disappointment and frustration and created a space that celebrates women in a category that often leaves them out of the conversation. They are both incredibly deserving and I can’t wait to honor them in July!”

Guests are invited to celebrate this year’s Tales Catalyst Honorees during Tales of the Cocktail® on Tuesday, July 23 at 3:00 PM. For those who are interested in attending, tickets may be purchased on the TOTCF website.

The 2024 Spirited Awards: Top 4 Finalists

The 2024 Spirited Awards: Top 4 Finalists

by David Klemt

AI-generated image of the Tales of the Cocktail Spirited Award on top of a bar, next to a cocktail

This is what Shutterstock’s AI think a Spirited Award looks like. At least the spelling is accurate.

We’re excited to share the top finalists in each of the 2024 Spirited Awards categories, announced by the Tales of the Cocktail Foundation.

It’s a monumental task to come up with the top-ten nominees, I’m certain. So, I can only imagine what it’s like to remove six well-deserving nominees from each category.

As regular readers of KRG Hospitality probably know by now, I do have a bit of bias for venues and industry pros in Las Vegas, New Orleans, Chicago, and basically the entirety of Canada. The same can be said for Bar Hacks podcast guests.

However, I’m just excited to see such amazing people, venues, and outlets receive Spirited Awards recognition. This time around, I’ll keep my bar biases to myself.

With that said, we do know four of this year’s recipients already. We’ll learn who took home the rest of the awards on Thursday, July 25.

2024 Spirited Awards: Top 10 Nominees

The 2024 Spirited Awards: Top 10 Nominees

by David Klemt

AI-generated image of the Tales of the Cocktail Spirited Award on top of a bar, next to a cocktail

This is what Shutterstock’s AI thinks a Spirited Award looks like. Close? I guess? Hmm…

Just a month after unveiling their top-ten regional honorees, Tales of the Cocktail Foundation reveals the top-ten nominees for each Spirited Award category.

That’s an impressively quick turnaround for such a monumental task.

So, let’s raise a glass (low-, full-, or zero-proof) to the judges and TOTCF for whittling down each award to just ten nominees.

My Vegas Bias is Showing…

As usual, I’m going to show my bias a bit here. Just two nominees represent Las Vegas, but they’re both incredible.

Nectaly Mendoza is up for Best US Bar Mentor, and his concept Cleaver is a top-ten nominee for Best US Restaurant Bar.

I cut began my hospitality journey in and around Chicago, so cheers to three Windy City bars who have made it to this round of the Spirited Awards.

Best Intentions is still in for Best US Bar Team and Best US Cocktail Bar. Milk Room at the Chicago Athletic Hotel is a top-ten nominee for Best US Hotel Bar, and Kumiko is up against Cleaver and eight other amazing venues for Best US Restaurant Bar.

…But so is My Canadian Bias!

Of course, I also have a “wee bit” of bias when it comes to Canada, given that KRG Hospitality was founded and is headquartered in America’s neighbor to the north. First, congratulations to Kate Boushel! She’s definitely getting the acknowledgement for her leadership and contributions that she deserves. Not only is the revered bartender and mentor a top-ten nominee for International Bartender of the Year, she’s the first Canadian to win the 2024 Altos Bartenders’ Bartender Award from North America’s 50 Best Bars.

There are also five Canadian venues in the running for a 2024 Spirited Award.

Atwater Cocktail Club, for which Boushel is the director of beverage and education, is a top-ten nominee for Best International Bar Team. Library Bar at the Fairmont Royal York is in for Best International Hotel Bar. Bar Kismet and Published on Main are both among the ten nominees for Best International Restaurant Bar. So, cheers to Halifax, Montréal, Toronto, and Vancouver.

Setting aside my bias for Vegas-based and Canadian bars, restaurants, and hotels now, congratulations to every nominee on the list below! Each team’s hard work and dedication has earned them the recognition they deserve. Cheers!

This is what Shutterstock’s AI think a Spirited Award looks like. At least the spelling is accurate.

Please join us in raising a glass of your favorite beveragefull-, low-, or no-ABVto the 18th annual Spirited Awards Regional Top 10 Honorees.

Overall, New York City lays claim to the most honorees with a staggering 27. In second place among the American cities is Chicago, with 17 honorees. New Orleans comes in at third with 13 honorees dotted throughout the city.

That brings us to Canada. There’s a tie between Montréal, Québec, and Toronto, Ontario, for first place. Each city boasts 15 Regional Top 10 Honorees. Vancouver follows with 11 honorees. Appearing in two categories is Dartmouth, Nova Scotia’s Dear Friend Bar. There are also two honorees in Québec City, Québec.

As you can see, a handful of cities throughout North America are doing very well in terms of the bar scene. Internationally, London is home to 17 honorees, Singapore claims 15, and Mexico City boasts 12 honorees.

You’ll find the entire list of honorees below, starting with America. What can I say? I just have to be different. Cheers!

Hey, Bartenders: Tales Wants Your Input

Hey, Bartenders: Tales of the Cocktail Wants Your Input

by David Klemt

Bar or restaurant worker on phone in alleyway with graffiti

The Tales of the Cocktail Foundation and the IWSR would like bartenders around the world to complete a survey for a research project.

Attendees of the 2023 event in New Orleans may be familiar with this initiative. Entering into what TOTCF would like to be a long-term partnership, the IWSR, Drinks Market Analysis is collaborating on the project.

As a refresher, the IWSR is known throughout the global industry as the standard in beverage alcohol data collection and research. For an idea of the insights the industry intelligence agency can provide, check out their 2024 beverage trends e-book.

So, what does this have to do with bartenders? Well, it’s simple, really.

At its core, Tales of the Cocktail is about a key relationship within the hospitality industry. Namely, bartenders and beverage brands. Traditionally, that has meant spirits brands. However, this relationship now certainly includes zero-proof brands alongside their alcoholic spirits, beer, and wine counterparts.

Given how important this inextricable connection is to the industry as a whole, it’s logical that the TOTCF is interested in understanding it on a deeper level. This is where bartenders (and bar and restaurant staff) enter into the TOTCF-IWSR partnership.

All Tales needs from bartenders across the globe is five to ten minutes of their time. That’s as long as it should take for bartenders to complete a survey hosted by the IWSR.

Anyone interested in participatingand it’s not a huge ask, in my opinionshould click this link to learn more. However, for those who require a bit more incentive than just helping Tales, there are two $100 Amazon gift cards up for grabs.

Spend a few minutes, maybe win a prize. Sounds good to me.

Additional Details

The main focus of Tales has leaned toward bartenders. But, as stated above, this survey isn’t exclusive to that role.

As the rules state, other bar and restaurant team members may participate and take the survey as well.

Bear in mind, however, that this survey closes soon. Anyone who wants to contribute to this research project has only until April 8 to do so.

Further, the findings of this survey will be shared at this year’s Tales of the Cocktail, which takes place from July 21 to July 26. Tickets go on sale on Monday, May 13, also known as World Cocktail Day. Mark your calendars!

Per the IWSR’s survey page, the survey is anonymous; answers aren’t tied to a participant’s personal information. Further, the IWSR’s analysis of answers will be at the group level, not individual.

If this all sounds good, please follow this link to participate: https://talesofthecocktail.org/iwsr-drinks-market-analysis/

Cheers!

TOTCF Unveils National Policy Initiative

TOTCF Unveils National Policy Initiative

by David Klemt

Tales of the Cocktail 2023 Singapore x Tales Residency

Yesterday, the Tales of the Cocktail Foundation announced the launch of their Policy Initiative, intended to update outdated labor standards and pay.

Along with advocating for both bartenders and servers, the initiative seeks to raise the subminimum wage to $2.13.

This news comes on the heels of the completion of an in-depth survey. The TOTCF surveyed more than 510 bartenders and other hospitality industry professionals about pay and other compensation.

In particular, more than half of bar workers want employers to provide health insurance. On the restaurant side, servers want to say increases in pay.

There’s much more, of course. Please visit this link to discover the finer details of the TOTCF Policy Initiative. Additionally, you’ll find TOTCF’s press release in its entirety below.

INTRODUCING THE TALES OF THE COCKTAIL FOUNDATION® POLICY INITIATIVE

TOTCF introduces a national initiative aimed at policy change in support of the hospitality community with first priority centered on improving labor standards for bar professionals

NEW ORLEANS, LA (February 13, 2024) — Tales of the Cocktail Foundation® (TOTCF) is pleased to announce the launch of the Tales of the Cocktail Foundation Policy Initiative, a multi-faceted effort designed to amplify and advocate for improved benefits and resources for hospitality professionals in the United States. The TOTCF Policy Initiative – which includes a robust nationwide survey and research project, coupled with support from the initiative’s advocacy committee members and partners – will catalyze an extensive campaign to create policy reform and positive change within the food and beverage community.

“Supporting an industry that has been historically underserved – from lack of industry research, common resources to educate and inform, and funding for coalitions – is crucial in breaking the cycles that have made it difficult to build a lifelong career in hospitality,” said Tales of the Cocktail Foundation CEO Eileen Wayner.

Intended to shift antiquated and subpar labor standards through industry support of positive policy action, the TOTCF Policy Initiative’s objectives include providing resources for employees and employers on labor standards and protections, conducting research and supporting efforts toward effective policy changes, information on healthcare access and benefits, sexual harassment training, and youth worker engagement – all with an emphasis on diversity and inclusion. The TOTCF Policy Initiative, along with its Bar Professional Policy Network Hub, will assist with the organization of grassroots development and advocacy efforts in industry professionals’ local communities, providing opportunities for advocates to be directly involved in policy and reform in their own communities.

“Given our unique position within the industry, we want to offer platforms and resources for productive conversations between policymakers, industry executives, bar owners and operators, and bar professionals, to ensure existing and future policy changes are reflective and inclusive,” said Tammera Catchings, Government Affairs Manager for Tales of the Cocktail Foundation. “For TOTCF, the process begins with supportive research data and intricate data analysis of bar industry professionals and their work.”

The Policy Initiative is centered around improving labor standards for hospitality professionals around the country and supporting increased protections that will help ensure bartending and serving are viable, long-term careers. One of the first priorities of the TOTCF Policy Initiative is to support efforts to increase the subminimum wage of $2.13 for bartenders and servers. Since 1990, employment in the hospitality industry has grown over 85%, while overall private-sector employment grew by only 24%. With more than one in ten U.S. workers employed in the hospitality industry, increasing the wage floor and improving labor standards would significantly improve the well-being of millions of Americans and their families and help reduce long-standing race and gender-based wage inequities.

Launched in spring 2022, Phase One of the Policy Initiative consisted of a robust research project, which culminated with an industry-specific data collection completed by more than 500 bartenders and servers nationwide, targeting topics such as job quality, compensation, tip culture, health benefits, and more. This research, which was analyzed by Dynata, the nation’s largest first-party data company, resulted in a compilation of data that highlights key trends in the hospitality community. By effectively utilizing the survey data to start a progressive dialog amongst hospitality executives, politicians, and advocates, the TOTCF Policy Initiative will encourage significant changes in the economic and labor standards for all bartenders and servers in the country. Research results will be published as analyzed on the Tales of the Cocktail Foundation Policy website in April 2024. In Phase Two of the initiative to support positive policy reform, TOTCF is partnering with Florida International University Chaplin School of Hospitality and Tourism Management to conduct further research and analysis into industry labor standards, culminating in research publication at the end of 2024.

Top 10 2023 Spirited Awards Nominees

Tales Unveils Top 10 2023 Spirited Awards Nominees

by David Klemt

Neon sign in red that reads "Cocktails"

The wait to discover the top nominees in each category of this year’s Tales of the Cocktail Spirited Awards is finally over.

The Tales of the Cocktail Foundation revealed every 2023 Spirited Awards honoree roughly two months ago. That the TOTCF managed to whittle the list down that quickly is impressive.

New York City, of course, is well represented in terms of top ten Spirited Awards nominees. Likewise, Austin, Miami, Nashville, New Orleans, Phoenix, and Washington, DC.

Atwater Cocktail Club in Montréal and Botanist at the Fairmont Pacific Rim Hotel are representing Canada. Dubai, London, Mexico City, and Sydney have strong showings as well.

The anticipation for this year’s winners continues to grow. Congratulations to this year’s top ten nominees!
