Independents: Which Cities Lead the Way?

The majority of the top ten indie restaurants on the Restaurant Business Top 100 Independents ranking are in two American cities.

Those two cities are Miami Beach, Florida, and Chicago, Illinois. While Miami Beach claims two spots among the top three, Chicago has the most restaurants in the top ten. However, the top three indies are all in Florida, with number two being the Boathouse in Orlando.

So, Florida and Illinois are home to nearly the entire top ten of Restaurant Business’ Top 100 Independents. That’s impressive.

What’s even more impressive is the combined annual sales figure of the top ten: $333.4 million. Now, let’s separate Miami Beach. The three indies in the Florida city generated nearly $114 million themselves. Chicago’s four indies among the top ten generated $118 million.

Taken together, the top 100 indies generated $1.95 billion.

All told, 14 of the top 100 indies as ranked by Restaurant Business are in Chicago. Five are in Miami Beach, and five are in Miami. Before I move on, no, Miami Beach and Miami aren’t the same city; they’re entirely separate municipalities. In total, 16 restaurants on this list are in Florida.

New York boasts 15 restaurants on the list. Four are in San Francisco, and just two are in Los Angeles. However, California claims 15 restaurants in total.

However, as you’ll see below, this Restaurant Business list consists of more than just the usual big cities.

Restaurant Business Top 100 Independents: The Top Ten

Below, the top ten independent restaurants, per Restaurant Business.

Alinea commands the highest average check among the top ten, at $650. The most reasonable is the Boathouse, averaging $45.

Interestinglyand perhaps logicallythese two restaurants find themselves in the inverse when it comes to annual meals served. The Boathouse serves the most: just over one million. And Alinea, among the top ten indies, serves the least: nearly 45,700.

Notably, when we move on to numbers 11 to 20, Las Vegas, Miami, and New York account for six restaurants.

However, it’s also notable that it’s not just the usual big cities with restaurants on this list. Smaller cities, such as Frankenmuth in Michigan, are home to some of America’s top-performing independent restaurants.

For some context, Frankenmuth has a population of less than 5,200 people. However, Michigan’s “Little Bavaria” draws three million tourists per year. So, it’s no surprise that Zehnder’s Restaurant generates more than $19 million in annual sales.

Restaurant Business Top 100 Independents: The Bottom Ten

Just for fun, let’s take a look at the bottom ten on the Restaurant Business list.

Adding context, these ten restaurants have generated $114.6 million in annual sales. That’s roughly the same amount of annual sales as the three restaurants in Miami Beach in the top ten.

Each of the “bottom” ten has annual sales ranging from $11.2 million to $11.9 million.

Takeaway

We all know the following axiom: “Location, location, location.”

It’s tempting to assume this means a business must be in a major city. That’s a woeful oversimplification. Myriad considerations must be made when looking at a market, whether the population is in the hundreds or millions. Assuming a concept will drive traffic and generate millions of dollars solely because it’s in a major city is foolish.

Let’s take another look at Zehnder’s in Frankenmuth. The restaurant, number 47 on the list, generated $19.2 million in annual sales. Moreover, it’s in a town with a population under 5,200.

Number 46 generated $19.3 million and is in (on?) Waimea in Hawaii. Number 48 boasted annual sales of $19 million and is in a city with a population of almost 2.7 million: Chicago.

Clearly, tourism a key contributing factor to the success of Zehnder’s. Not population, not the demographics of the permanent residents, not big-city status.

So, what about check average? Alinea, number ten, has the highest at $650 and generated $28.3 million in sales. However, the Spot, number 85, has an average check of $18 and generated $12.3 million.

The success of any restaurant, bar, nightlife or eatertainment concept doesn’t come down to a single element. What sets a concept apart is a deep understanding of a specific market, the surrounding markets, “sister” sites and competitors, guest desires and expectations, and so much more.

How does an operator come to understand their operation and their market? A feasibility study to start. Then comes a thorough, coherent concept plan and a complete business plan, and an obsession with data.

Operators who put in the work to attain strategic clarity have the potential to earn their way onto the Top 100 Independents list.

Check out the back half of the 2023 World’s 50 Best Bars list ahead of the one through 50 reveal taking place in Singapore on October 17.

In terms of single-country performance, the United States of America claims the most spots on this list with six. Unsurprisingly, four of these bars in New York. Rounding out the six American venues are one in Chicago and one in California.

However, in combination with Mexico and Canada, North America earns 11 places. Unfortunately, Canada earns just one spot with a bar in Toronto. Mexico City, however, is home to two of the best bars in North America (and the world).

It’s Europe as a whole, though, that boasts the most positions, with 17 bars on the list. Five of the 17 are in England.

Asia comes in second as a continent with 14 venues on the back half of the 2023 World’s 50 Best Bars. It should come as no surprise that Singapore claims five spots.

After asking ChatGPT to suggest SEO improvements for restaurants, bars, and nightclubs, we’ve done the same for the hotel space.

This is part two of our AI-generated SEO tips series. In part one, we focus on restaurants, bars, nightclubs, and eatertainment venues.

For this part, we ask ChatGPT about improving SEO for boutique hotels, independently owned hotels, boutique and luxury campgrounds, and boutique and luxury lodges.

The boutique and luxury outdoor experiential market is heating up. So, I was curious about what keywords and advice ChatGPT would recommend to help operators in this space stand out and improve their odds for discover.

Personally, I found some of the keyword suggestions helpful. However, these are terms we at KRG Hospitality already know to include in our brand identity and marketing plans.

Simply put, I don’t think AI rivals what humans can create when it comes to brand identity and marketing. But, you should read the following and decide for yourself.

The answers to my questions do provide some good tips regarding specific keywords and SEO practices. However, I wouldn’t suggest that operators trust AI to write their listings or the pages on their websites.

As it stands, in my opinion, AI just can’t match what people can do when it comes to marketing, branding, and discovery.

Since AI tools such as ChatGPT can instantly crawl the depths of the Internet, we want to know if they can provide “insider” tips. Perhaps they have a leg up when it comes to parsing what helps and what hurts SEO ranking.

Restaurant, bar, and nightclub websites still matter. Consider the latest SevenRooms data in regards to how people discover new places to dine, drink, and socialize. Two-thirds of consumers rely on word-of-mouth recommendations from family and friends. A third use Google.

So, that should show how important it is to ensure your restaurant, bar, or nightclub is showing up right away when people are using search engines.

Takeaway

Operators need to pay attention to SEO ranking and discovery. They need to own their listings and make sure the information is accurate.

While AI can help with keywords and search terms, it doesn’t appear to be at the point where it can manage your SEO or marketing strategy. There are platforms like Toast, Restaurant365 and SevenRooms that can make marketing simpler. However, people still do the best job.

Can AI streamline tasks? Yes, it can simplify and, in some cases, take over some tasks. Can it create effective, engaging marketing strategies that perform better than those created and executed by humans? In our experience and opinion, no.

I think the answers to my SEO questions above are helpful in terms of making suggestions that operators can use today to improve their odds of being discovered by guests. And I still don’t think operators can offload marketing responsibilities to AI.

Double Chicken Please in New York City is number one on this year’s list.

The buildup toward this year’s World’s 50 Best Bars is growing with the recent announcement of North America’s 50 Best Bars.

Mexico City, the 2023 North America’s 50 Best Bars host city, is home to several of this year’s rankings. A true cocktail destination loaded with extraordinary bars, Mexico City boasts eight entries. Overall, 14 of the 50 bars on the 2023 list are in Mexico.

Of course, New York City also claims an impressive number of bars earning spots on the list. In fact, NYC boasts 12 of the 50 best bars in North America. More than half of the bars—28—are in the US.

Not that anyone asked, two of the bars on the 2023 list are in the city where I was born, Chicago: Kumiko and Milk Room. And I’m going to give a special nod to Herbs & Rye, number 27 and located in my hometown of Las Vegas (and the US headquarters of KRG Hospitality).

Of the 50 best bars in North America, Canada is home to seven. Four of these are in Toronto (where KRG Hospitality’s global headquarters are located), two are in Montreal, and one is in Vancouver.

Just one bar in the Caribbean makes the 2023 North America’s 50 Best Bars list. But what a bar: La Factoría is number 24.

The World’s 50 Best Hotels launches this year, completing the hospitality puzzle as it joins the World’s 50 Best Bars and the World’s 50 Best Restaurants.

Mark Sansom, content director for the World’s 50 Best Bars, shares details of the new list on episode 90 of the Bar Hacks podcast. To learn more about Mark and the World’s 50 Best Bars, you can also listen to episode 82 of Bar Hacks.

This is huge news for the hospitality, travel, and accommodation sectors. Sansom and the team go to great lengths when it comes to every detail of the World’s 50 Best Bars. Indeed, the awards ceremony is truly the Oscars of the bar world. Just take a look at the video below:

In fact, it’s likely a bit more fun than the Oscars. A room full of the best bar teams and industry professionals? You know it’s a nonstop party.

I say to say this: I expect the Oscars of the hotel world for the inaugural 50 Best Hotels ceremony. And I’m confident the team will deliver on that expectation.

Who Decides?

You’re probably wondering how all of this “works.” Just who decides, among all the hotels throughout the world, which are the 50 best?

As Sansom explains on the Bar Hacks podcast, hundreds of people decide.

For 2023, the World’s 50 Best Hotels is split into nine regions. That’s likely to grow (50 Best Bars and Restaurants each have 28 regions) but for now, that’s the breakdown.

Each of those regions is headed by an Academy Chair. The global Academy Chairs hand select voters. In this case, a mix of 580 travel journalists, educators, hospitality professionals, hoteliers, and luxury travelers. The voters are tasked with highlighting their top seven hotel experiences from the past two years.

A small board of directors isn’t deciding which hotels will make the list. There’s no small group choosing the ranking. Instead, hundreds of industry pros and hotel guests will determine the best of the best.

How do They Decide?

This is one of my favorite details. When it comes to criteria…there isn’t any.

I like this for several reasons, one of which is that nothing arbitrary is limiting these awards. Don’t have a pool? That’s fine. No steam shower in the en suite? Okay.

By eschewing criteria, no concept is left out—no property is excluded. As Sansom says on episode 90 of Bar Hacks, imposing criteria means people could miss out on experiencing stunning twelve-room boutique hotel.

Therefore, this list isn’t the exclusive domain of multi-unit, multi-concept hotel groups. Certainly there will be chain properties up for consideration. However, they’ll be mixing it up with boutique and solo, independent hotels.

Sansom also reveals what’s driving them to launch the World’s 50 Best Hotels. Far from a vanity project, this list is about helping the industry.

Like hospitality, travel and accommodation are recovering from a global pandemic. Highlighting the best hotels in the world should inspire people to get back to leisure travel.

Which US Cities and States are the Happiest?

As an entrepreneur and operator evaluating a market for a first location or expansion, it can help to know where people are happiest.

Equally as helpful: Knowing the cities and states that are the least happy. Not, necessarily, so an operator can avoid these markets.

Rather, one’s concept may be a ray of stress-free sunshine for a given community. Providing a great workplace with a positive culture can work wonders for both the happiest and least-happy places. And as the cornerstones of the communities they serve, restaurants and bars can improve their guests’ quality of life.

We’ve looked at the US cities with the greatest inflow and outflow (which can reveal happiness levels), as identified by Redfin. And we’ve checked out the best US retirement cities, researched by Clever.

Now, we’re taking a look at which US cities and states are the happiest and least happy, according to WalletHub. In case you’re unaware, personal finance site WalletHub researches a vast array of topics. You can browse them here.

Happiest Cities

While determining which are happiest, WalletHub identified the happiest 182 cities. Obviously, that’s a far cry from how many cities are in the US.

According to one source, there 19,495 cities, towns, and villages across the country (per data from 2018). Of those, 4,727 cities have populations of 5,000 or more. A total of 310 cities have populations of at least 100,000, and only ten are home to one million people or more.

So, living in any of the 182 cities WalletHub suggests one is pretty happy. However, these are the ten happiest cities, in descending order:

  1. Fremont, California
  2. Columbia, Maryland
  3. San Francisco, California
  4. San Jose, California
  5. Irvine, California
  6. Madison, Wisconsin
  7. Seattle, Washington
  8. Overland Park, Kansas
  9. Huntington Beach, California
  10. San Diego, California

As you can see, six of the 10 cities are in California. In fact, 29 of the 182 cities on this list are located in the Golden State.

To create their list, WalletHub analyzed several metrics that make up three main categories: emotional and physical well-being; work environment; and community and environment.

Fremont, CA, is number one for emotional and physical well-being. The top spot for work environment goes to San Francisco, CA. And the number-one city for community and environment is Casper, Wyoming, which is number 79 on the list overall.

Least-happy Cities

Again, understanding that there are more than 19,400 cities, towns, and villages in the US alters the context of this list a bit.

Living and operating in one of these 182 cities indicates a person is living in a happy city. Basically, it isn’t the worst place to live if it’s on this list.

At any rate, let’s look at the 10 cities that make up the bottom of WalletHub’s list. Or, the “least-happy” cities, at least as far as these rankings are concerned.

  1. Detroit, Michigan
  2. Gulfport, Mississippi
  3. Memphis, Tennessee
  4. Huntington, West Virginia
  5. Montgomery, Alabama
  6. Cleveland, Ohio
  7. Augusta, Georgia
  8. Fort Smith, Arizona

  10. Shreveport, Louisiana

Happiest States

WalletHub also ranked 50 states to determine the happiest and least happy. I checked, and, yep, that’s all of ’em! I will say it’s a bit disappointing they didn’t include Puerto Rico, but it isn’t the 51st state (yet).

WalletHub focused on 30 metrics to rank the states, which make up three main categories: emotional and physical well-being; work environment; and community and environment.

In descending order, the happiest states in America are:

  1. Hawaii
  2. Maryland
  3. Minnesota
  4. Utah
  5. New Jersey
  6. Idaho
  7. California
  8. Illinois
  9. Nebraska
  10. Connecticut

Hawaii doesn’t just take the top spot overall, it also claims number one for emotional and physical well-being. Utah takes first for work environment, and community and environment.

Rounding out the “happiest half” of the US are:

  1. Virginia
  2. South Dakota
  3. North Dakota
  4. Massachusetts
  5. New Hampshire
  6. Iowa
  7. Delaware
  8. Florida
  9. Georgia
  10. North Carolina
  11. Wisconsin
  12. Washington
  13. New York
  14. Maine

Least-happy States

Conversely, the following are the least-happy states, starting with the unhappiest:

  1. West Virginia

Filling out the least-happy half of the country are:

In terms of the three metrics WalletHub analyzed, West Virginia is ranked last for emotional and physical well-being. Unfortunately, Mississippi is last for work environment. And Texas comes in last for community and environment.

Bon Appétit Reveals the Best New Restaurants in 2022

Condé Nast’s American food and restaurant publication Bon Appétit identifies the 50 restaurants they deem the very best in 2022.

The intriguing list highlights the consumer desire to try a wide range of global cuisines. Indeed, were one to eat their through Bon Appétit‘s 2022 list, they’d enjoy both traditional and modern:

  • African (notably, Nigerian)
  • Cantonese
  • Caribbean
  • Eastern European (Hungarian, in particular)
  • Filipino
  • French
  • Indian (including Goan and Kashmiri)
  • Italian
  • Japanese
  • Jewish
  • Korean
  • Laotian
  • Mexican
  • Palestinian
  • Portuguese
  • Vietnamese

Of course, one will also find American cuisine. Of note, Texas barbecue, elements of Memphis barbecue, Low Country, Cajun cooking, and Midwest comfort food. There are also restaurants offering creative takes on traditional steakhouse fare. One restaurant’s focus, The Nicolett in Lubbock, Texas, is High Plains cuisine. (For those wondering, Bon Appétit describes this as “West Texas terroir.”)

This is a compelling list, showing that consumers crave a balance between comfort food and stepping outside of their comfort zones to discover cuisines that are new to them. I encourage everyone to look into these restaurants for inspiration and motivation.

Regional Performance

For simplicity, Bon Appétit arranges their list by dividing the US into four large regions: Midwest, Northeast & Mid-Atlantic, South, and West.

Interestingly, the South claims the most restaurants on this list of the 50 best, earning 17 spots. Northeast & Mid-Atlantic restaurants grab 15 spots, the West takes 12, and the Midwest claims just six.

When it comes to the South, Texas performs the best in terms of number of restaurants on the list. There are two in Austin, and one each in Fort Worth, Garland, Houston, Lubbock, and San Antonio.

However, Florida, Georgia and Louisiana also do well for the South, earning three spots each in the following cities:

  • Miami (2) and North Miami (1)
  • Atlanta (2) and Savannah (1)
  • New Orleans (3)

Unsurprisingly, New York leads the way for the Northeast & Mid-Atlantic region. Drilling down, Brooklyn boasts four of Bon Appétit‘s 50 Best New Restaurants 2022; New York City is the home of three; and one is in Hudson.

Pennsylvania, however, claims three spots, all in Philadelphia.

Equally as foreseeable, California boasts the most restaurants among this list of fifty. Predictably, most are in Los Angeles, which claims three in total. Oakland, San Diego, and San Francisco round out California’s spots with one each. Coming in second in terms of Western states with multiple restaurants on the list is Oregon, with two in Portland.

Unfortunately, the Midwest simply doesn’t perform nearly as well on this year’s list as its counterparts. In fact, it has just half the number of restaurants as the third-place region with six. Cincinnati, Ohio, takes a third of those spots. Surprisingly, Chicago is home to just one restaurant on this list.

The Brewers Association‘s 2022 World Beer Cup identifies the top three beers across a staggering 103 separate categories.

So, yes—I envy the World Beer Cup judges. I mean, what beer fan wouldn’t want to taste all the entries into the Olympics of Beer?

This competition, developed by the Brewers Association, has been going strong since 1996. Next year’s competition, if you happen to brew beer and want to enter it, will take place in Nashville in May.

Okay, you may be wondering why I’m talking about this beer competition. The reason is simple: To get your ready for September.

There are three beer holidays to program for and celebrate next month:

  • National Beer Lover’s Day (September 7)
  • National Crush a Can Day (September 27)
  • Drink Beer Day (September 28)

Oh, and there’s this little event—Oktoberfest—that takes place from September 17 to October 3.

Hot off the presses, Time Out is now revealing the results of their Time Out Index 2022, an annual list identifying the world’s top cities.

The global publication, founded in the late 1960s, surveyed 20,000 “city dwellers.” Time Out focuses on cities’ restaurant, bar, nightlife, entertainment, and art scenes.

For 2020 and 2021, Time Out put emphasis on the pandemic and how cities maintained resiliency and kept communities together. In 2022, priority is given to flourishing nightlife, dining, and drinking, along with culture.

Additionally, Time Out gives weight to a city’s sustainability, safety, walkability, and affordability. To learn more about how Time Out analyzes data, click here.

Compelling Rankings

Below, you’ll find Time Out’s ranking of the best 53 cities in the world for 2022. I’ve broken the list into sections: 53 to 11, and ten to number one.

Interestingly, the 20,000 survey respondents note the dining, drinking, and nightlife of the top five cities. In fact, the nightlife scene of number three is “the world’s best.”

And city number two? Survey takers think it’s the most fun—”funnest,” according to Time Out—in the world.

Now, I know our audience is largely American and Canadian, so I’ll get to how both rank. Six cities—the usual suspects, basically—in the US are on the list. Only one American city is in the top ten, and it’s likely not the one you think. As for Canada, one city claims the 27 spot, another is number nine.
