That’s a rad sweater.

In a move that highlights the brand’s forward-thinking commitment to growth, Talkhouse Encore is appointing a Vice President of Marketing.

If you’re a regular reader you’re aware that I don’t share every bit of industry news. Hospitality moves quickly, and developments flow steadily. Appointments, case sales, market expansions… There’s a lot to monitor.

However, I do love to watch Bar Hacks podcast guests grow. It’s a privilege to check in with them and share where they are in their journeys with listeners and readers. On episode 141,  I speak with Talkhouse Encore’s president and co-founder Robert Minucci.

We dive into the story behind the premium RTD brand’s inception: its connection to an iconic music venue, putting in the work to grow in a highly competitive category during the pandemic, and facing skeptical (sometimes cynical) distributors.

Minucci shares how his business partner, Ruby Honerkamp, sought to bring the spirit of Stephen Talkhouse to the masses through “dive bar classic” vodka and tequila seltzers.

At the brand’s core: authenticity and flavor. In particular, there’s a focus on earning brand loyalty from legal-age Gen Z consumers. Speaking broadly, Gen Z wants a story and a connection to a brand. Really, it’s what most people want these days.

Connection Through Authenticity

During our conversation, Minucci explains how the small-but-nimble team focuses on building a strong local presence before considering expansion, ensuring that they meet consumer demands with quality ingredients and an engaging brand narrative.

If, as the saying goes, you can’t do epic things with basic people, it stands to reason that you can’t build an iconic brand with a basic team. And when your brand has a direct connection to an icon—in this case, a revered live music venue—the pressure to reach similar status is very real.

This is where the newly-appointed Vice President of Marketing takes the stage to help tell the Talkhouse Encore story.

Aiming for Iconic

Aiming for epic and iconic certainly seems to be a key driver of Roth’s brand storytelling. She developed her mastery of lifestyle brand marketing at Diageo. Pepsi benefited from her positioning prowess when she led their Super Bowl LVII activations.

Proving she knows how to build connections at the consumer level, Roth led the sampling of 1.5 million cans of Alani Nu. Earlier this year, Alani Nu was acquired for $1.8 billion by Celsius, which itself saw PepsiCo increase its stake in the energy drink brand juggernaut to 11 percent.

Those are just a few of Roth’s marketing and expansion accolades.

“I’m thrilled to step into the VP of Marketing role at Talkhouse Encore,” says Roth. “My focus is on building out an omni-channel marketing strategy that introduces more consumers to our premium vodka and tequila sodas. We’re setting the stage for significant growth in 2026 and beyond!”

Will this Drink Trend Lead Us Into 2025?

One of the latest drink trends, a unique cream liqueur made from purple yam, may have the staying power to heat up through New Year’s Eve.

Now, when I describe it as unique, I’m not indulging in PR-speak, I mean it; there’s only one Ube Cream Liqueur. That includes, up to this point, additional expressions. Again, there’s only one Uber Cream Liqueur.

Making this liqueur even more exclusive is the fact that just one distillery produces it: Destileria Barako. They’ve done so since 2016. The distillery makes some other intriguing products as well. For example, there’s a lychee and lemongrass liqueur called Gayuma that also includes vacuum-distilled smoke distillate. Compelling…

So, what is Ube? Put very simply, it’s a lavender-colored cream liqueur made from ube. That’s a purple yam, and the liqueur itself calls the Philippines home. Interestingly, while the liqueur is lavender in color, ube can be violet, purple, lavender, and even white.

Before I go any further, a purple yam is not the same as a purple sweet potato. A purple yam will be, generally speaking, sweeter than its sweet potato counterpart, while being slightly more subtle in terms of flavor profile. Expect vanilla up front, with a subtle nutty undertone and finish.

And if you’re curious as to the meaning of “ube,” it translates from Tagalog to English as “tuber.” Quite a literal name for this special vegetable.

Okay, great. But what about the liqueur that appears to be popping up on craft-cocktail-focused menus in the US?

What is Ube?

On the surface, it’s an imported cream liqueur in an attractive, fashionable bottle.

Going deeper, Ube is made from the eponymous tuber, coconut husks, and sugarcane vodka. The ingredients are sourced from local farms and their communities throughout the islands that make up the Philippines (of which there are more than 7,600).

The liquid itself is rich and creamy, as one would expect. Like its namesake, Ube’s flavor profile includes vanila, and a subtle nuttiness. However, the sugarcane vodka is detectable, and coconut also shines through.

Along with being unique, it’s also versatile. Bar guests can’t really go wrong with ordering it in just about any configuration: neat, chilled, on the rocks, frozen, in a cocktail… Ube is highly adaptable.

And that, if I had to point to a characteristic beyond flavor and mouthfeel, is likely why this cream liqueur is rising in popularity.

Bar teams can get creative with it. Guests can enjoy it in myriad forms. Even the culinary team can get involved, as it’s an intriguing ingredient for dishes (particularly dessert).

Introducing guests to Ube isn’t a hard sell, either. The bottle and liquid itself are appealing to the eye. And while bar and culinary teams can really tap into their imaginations and talents to create quirky sips and dishes, it works in instantly recognizable drinks as well.

For instance, there’s the Ube Mudslide, Purple Russian (a variant of the White Russian, of course), Ube Colada, Ube Coco Old Fashioned, and even the Ubegroni.

Proceed with Caution

Here’s a a viewpoint with which you may be familiar: Once a trend emerges and people jump on it, it’s no longer a trend. Instead, it either experiences widespread adoption, reaches ubiquity, or dies.

Another viewpoint is that due to social media, trends come and go so quickly that even those that stick around for more than a few days tend to fall off quickly.

Search online for Ube and you’ll likely come across posts about finding it in the US that are a year or more old. It seems that the interest in this particular cream liqueur picked up in earnest around August of this year.

All that is to say this: For the most part, unless a person or group of people originates a trend, everyone else will be a step or two behind if they choose to jump on it. Most trends don’t even actually reach that status; they die in their nascent stage: a fad.

So, operators and their teams should be selective when a product, flavor, menu item, preparation, etc. is getting a lot of attention “suddenly.”

Chasing every trend isn’t efficient, and doing so flies in the face of consistency.

Important Considerations

There are several questions an operator should consider and answer before embracing any trend (or fad). Below, the assumption is that the trend involves a specific product.

  • Will this resonate with enough guests to make this profitable?
  • Does this trend work with our brand or are we forcing it to fit artificially?
  • Can it be obtained easily and consistently? If not, can we make our own housemade version? What will that cost, including labor?
  • How much will it cost to add this product to our inventory?
  • What will it cost to train the team to use this product?
  • Who will train the team on this product? What’s the estimated learning curve? What will training cost, in terms of product and labor?
  • In terms of pricing, what’s our projected profit margin per item made with this product? How many do we expect to sell on a daily, weekly, and monthly basis, keeping in mind that this is a consumer trend.
  • How quickly, with the above considerations (and more), can we actually leverage the popularity of this trend? Will it still be popular after we’ve completed our due diligence?

Don’t Abandon Your Standards

This caution isn’t aimed at embracing Ube specifically. Rather, this is advice for considering any trend, product, or menu item.

The standard is for operators to be obsessed with their numbers. Look at the top operators in the businessnot necessarily those earning the most awards, but those leading their bars and restaurants to long-term success, and focused on building generational wealthand you’ll see how much they focus on numbers; they know them inside and out.

All too often it can be tempting to drop standards when something goes sideways. Service goes awry, for example, and we try to take a shortcut to recover.

The same can be said for chasing trends. It can be tempting to just throw a new, trending item on the menu without crunching the numbers, taking a shortcut to leverage the trend as quickly as possible.

A savvy operator will consider the numbers before adding anything to their inventory and menu. It shouldn’t take long, and running the numbers will prove whether the trend is worth pursuing.

I want to go to there, and drink that.

Operators, bar teams, and guests have the opportunity to partake in the first-ever National Rosolio Day, launched by ITALICUS Rosolio di Bergamotto.

The brand, known in part for its elegant and instantly recognizable bottle, is celebrating its eighth anniversary. To acknowledge their growth and mark this milestone, ITALICUS is launching the inaugural National Rosolio Day this coming Sunday, September 1.

I have to give the brand an approving nod here. They could be launching National ITALICUS Day. Instead, they’re celebrating the liqueur category that Giuseppe Gallo and the ITALICUS team have (re)introduced to modern cocktail lovers: rosolio.

I’ll get into the category in a moment. For now, there’s an interesting detail about the brand, the bottle, and the bar holiday launching on September 1.

Traditionally, eighth anniversaries are marked with gifts of bronze and pottery. Looking at the alluring, turquoise bottle, the label and stopper, one can argue, look bronze. Focusing on the stopper, there’s a relief of Bacchus, which looks like it could be porcelain, a form of pottery.

It’s almost like the team and bottle designer were prescient, and set the stage for this new bar holiday before the first case was ever shipped.

Global Celebration

Bars in France, Hong Kong, Hungary, Italy, New Zealand, the UK, the US, and Switzerland are participating via an exclusive cocktail menu.

One bartender recognizable the world over is LP O’Brien. Fans of the Netflix show Drink Masters know that O’Brien won the first season.

Her part in the National Rosolio Day celebration includes a series that will educate people on ITALICUS and aperitivo culture. I’m certainly looking forward to learning more about the brand, rosoli, and apertivos from one of the best bartenders and mixologists in the business.

Of course, there’s no reason operators reading this can’t show their support for National Rosolio Day by introducing their guests to ITALICUS and aperitivo culture.

As this will become an annual celebration, bars can plan to participate officially in 2025 and beyond.

Roso-what-now?

So, you likely know what a liqueur is. And I’m willing to go out on a limb and assume you’re familiar with aperitivos.

But what, you may be wondering, is a rosolio?

This drinks category is a low-ABV Italian liqueur that, according to multiple sources, predates amaro, bitters, and vermouth. This ancient liqueur was, of course, homemade, so the botanicals varied wildly depending on region and who was creating a particular batch.

ITALICUS, for example, is crafted using Bergamot oranges from Calabria (considered by many to be the finest citrus in the world), citrons from Sicily, chamomile sourced from Lazio, and several Northern Italian herbs, including gentian, lavender, lemon balm, and yellow roses.

Clearly, these flavors are perfect for summer sipping. Of course, with a bit of creativity, creating cocktails that appeal to guests every season is quite an easy feat to accomplish.

Given its name, you may be curious about the use of rose petals in the production of rosolio. Well, while there are rosoli made with rose petals as an ingredient, rosolio translates to “morning dew,” or “dew of the sun.”

Operators and bar teams interested in implementing an Aperitivo Hour rather than (or in addition to) a standard happy hour have the perfect opportunity this coming Sunday. National Rosolio Day is ideal for leveraging the growing popularity of low-ABV drinks. This new holiday is also one of the best times to introduce guests to relaxing, socializing, and starting their evening with an aperitivo.

So, this weekend (and throughout the month of September), raise a glass to ITALICUS and the brand’s eighth anniversary.

The award-winning Empress 1908 Indigo Gin and Elderflower Rose Gin are welcoming a new addition to the Empress 1908 Gin portfolio, just in time for summer.

Empress 1908 Cucumber Lemon Gin is here to take a shot at the gin crown.

Inspired by afternoon tea, Cucumber Lemon pulls the flavor threads tighter, tying the portfolio together. Indigo, the first expression in the Empress 1908 lineup, is a balance between citrus and warm, earthy, herbal tones. This gin also made a splash due to its use of butterfly pea flower, not only imbuing the liquid with an enticing hue but shifting colors when interacting with different mixers.

Cucumber & Tonic

  • 2 oz. Empress 1908 Cucumber Lemon Gin
  • 3 oz. Premium tonic water
  • Thyme sprigs to garnish
  • Lemon wheels to garnish
  • Cucumber slices to garnish

Fill a copa glass with ice, add Empress 1908 Cucumber Lemon Gin and premium tonic water. Garnish with cucumber and lemon slices and thyme sprigs.​

Jasmine Sour

  • 2 oz. Empress 1908 Cucumber Lemon Gin
  • ¾ oz. Fresh lemon juice
  • ¾ oz. Jasmine syrup
  • Egg white
  • Dried jasmine blossoms to garnish

Add all ingredients to a shaker tin and dry shake (without ice). Add ice to tin and shake again to chill. Double strain into cocktail glass and garnish with dried jasmine blossoms.

Gherkin Martini

  • 2 oz. Empress 1908 Cucumber Lemon Gin
  • 0.5 oz. Dry vermouth
  • 0.5 oz. Gherkin brine
  • Lemon twist to garnish
  • Gherkin to garnish

Stir all ingredients with ice and strain into a chilled cocktail glass. Express lemon oils over the cocktail and garnish with a twist and gherkin.​

Lemon Spritz

  • 1 oz. Empress 1908 Cucumber Lemon Gin
  • 1 oz. Limoncello
  • 0.5 oz. Lemon juice
  • Dry sparkling wine to top

  • Lemon slice to garnish

In a copa glass filled with ice, add gin, limoncello, and lemon juice, and top with sparkling wine and a splash of soda water. Give a quick stir to combine and garnish with lemon slice.

Empress 1908 Cucumber Lemon Gin Little Saigon cocktail

  • 1.5 oz. Empress 1908 Cucumber Lemon Gin
  • ¾ oz. Lemongrass ginger syrup
  • ¾ oz. Fresh lime juice
  • 2-3 Mint and basil leaves, each
  • 3-4 Bird’s eye chili slices (optional)
  • Lime yuzu soda to top
  • Cilantro sprig to garnish
  • Bird’s eye chili to garnish

Gently muddle basil and mint with syrup and lime juice in shaker tin. Add gin and chili slices, and shake over ice. Strain into Collins glass filled with ice, top with soda, and garnish.​

Empress 1908 Cucumber Lemon Gin Cantaloupe Smash cocktail

Cantaloupe Smash

  • 2 oz. Empress 1908 Cucumber Lemon Gin
  • ¾ oz. Fresh lemon juice
  • ¾ oz. Simple syrup
  • 4 Mint leaves
  • 3 Cantaloupe cubes
  • Mint sprig to garnish
  • Cantaloupe balls to garnish

In a shaker tin, muddle cantaloupe cubes with the liquid ingredients. Add mint leaves and lightly press to express oils. Shake over ice and strain over crushed ice. Garnish with mint sprig and cantaloupe balls.

A beautiful new luxury amaro from Italy is committing to becoming your nextand bestlover, whether you enjoy it straight up or in a fabulous cocktail.

Produced in Tuscany, Italy, at the Il Palagio 1530 estate, Amante 1530 hits a multitude of sweet spots.

Whereas Aperol comes in at 11-percent ABV and Campari hits between 24- and 29-percent ABV, Amante 1530 rings in at 15 percent. Further, this amaro has less sweetness than the former and less bitterness than the latter.

I sat down with Ana Rosenstein, the brand’s CEO, for an episode of the Bar Hacks podcast. Declaring herself a nerd, she explains that Amante 1530 falls in between Aperol and Campari, and can serve as an aperitivo or a digestivo.

Notably, the team behind Amante 1530 isn’t out to replace Aperol, Campari, or other well-established amari on the market. During our conversation, Rosenstein shares that she believes the brand speaks to an amaro consumer that hasn’t, until now, found the product that truly speaks to them. (You’ll also gain some invaluable insight into succeeding with investors during this episode.)

Below, four recipes that highlight Amante 1530’s key flavor notes of citrus, ginger, and honeysuckle. That said, I think you’ll find that Rosenstein’s recommendation of enjoying it neat or on the rocks with a slice of Amalfi lemon delivers an elegant and refreshing experience. Cheers!

The Last Lover

  • 1.5 oz. Amante 1530
  • 1 oz. Blanco tequila
  • 0.5 oz. Fresh lime juice
  • 2 oz. Quality soda water
  • 4 cucumber rounds
  • 1 barspoon Agave nectar (optional)

Muddle the cucumber rounds in a shaker, then add ice and the first three ingredients. As an option, you can add a barspoon of agave nectar. Shake, then strain into a Collins or highball glass. Top with soda water.

Moonraker

  • 1.5 oz. Gin
  • 0.75 oz. Amante 1530
  • 0.75 oz. Fresh lemon juice
  • 0.5 oz. Green tea simple syrup
  • 3 Cucumber rounds
  • 2 Cucumber ribbons to garnish

Muddle the cucumber rounds in a shaker. Fill shaker with ice. Add gin, Amante 1530, lemon juice, and green tea simple syrup. Shake well, then double-strain into cocktail coupe. Garnish with ribbons/lengthwise slices of cucumber, and serve.

Amante 1530 Amante Spritz cocktail

Amante Spritz

  • 2 parts Amante 1530
  • 3 parts Prosecco
  • 1 part High-quality soda water
  • 1 Amalfi lemon wedge to garnish

Prepare a stemmed balloon glass or goblet by adding ice. Next, add the Prosecco to the glass, followed by Amante 1530. Top with soda water, then squeeze the juice from the Amalfi lemon and drop in the wedge to garnish.

Amante 1530 Palombo tequila cocktail

Palombo

  • 1.5 oz. Reposado tequila
  • 0.75 oz. Amante 1530
  • 0.25 oz. Fresh lemon juice
  • 0.25 oz. Fresh lime juice
  • 0.5 oz. Simple syrup
  • 3 oz. Soda water
  • Lemon wheel to garnish

Prepare a Collins or highball glass by adding quality ice. To a shaker filled with ice add all the liquid ingredients except the soda water. Shake, then strain into the prepared glass. Top with the soda water, then garnish with the lemon wheel and serve.

Surfside ready-to-drink canned vodka cocktails 2024 lineup

There’s big news coming out of Philadelphia’s Stateside Vodka, the team that crafts the Surfside line of popular vodka-lemonade and vodka-tea RTDs.

In preparation for summer, Surfside is making two huge strides to establish itself in the RTD space.

The brand, which describes itself as “Sunshine in a Can,” launched in 2022. Interestingly, and possibly surprisingly for some, Surfside RTDs don’t feature carbonation. Moreover, they boast just 100 calories, 2 grams of sugar, and are sessionable at just 4.5-percent ABV.

Currently, there are four variations for consumers to enjoy: Iced Tea + Vodka, Peach Tea + Vodka, Half & Half + Vodka and Lemonade + Vodka.

However, that’s about to change…

Spectacular Growth

Since the brand’s launch, Surfside has racked up accolades and achievements. For example, Market Watch bestowed its “2023 Hot Brand Award” upon the RTD lineup last year.

Of particular note is the brand’s sales growth. With distribution in a mere 17 states, Surfside hit the 1.3-million-case mark by the end of last year. That achievement speaks to one of the brand’s announcements directly: Starting this summer, Surfside will be available in 48 US states.

And the second announcement? A lineup expansion in addition to the distribution expansion. Five new flavors will join the lineup: Green Tea + Vodka, Raspberry Tea + Vodka, Raspberry Lemonade + Vodka, Strawberry Lemonade + Vodka, and Black Cherry + Lemonade.

Driving visibility and brand awareness are partnerships with Minor and Major League Baseball. In fact, the Atlanta Braves, Baltimore Orioles, Cleveland Guardians, and the Pittsburgh Pirates are on board with Surfside.

Taken the together, these announcements show that Surfside is poised to be the RTD of the summer. That means operators and their teams need to keep an ear out for guests asking if their bar or restaurant carries Surfside. Given the brand’s growth, it’s likely that consumers across the US will try it, like it, and expect to find it on-premise.

Or, put more simply: Guests are going to expect to be able to order Surfside when they’re out at bars, restaurants, dayclubs, and nightclubs.

Will this be the brand to challenge White Claw and Truly for RTD dominance? Only time will tell, but 2024 may just prove to be the Summer of Surfside.

A brand-new release from Rémy Martin seeks to not only solidify itself as a new way to start a night out but also prove Cognac isn’t an old-fashioned drink.

XO Night, the newest member of the Rémy Martin family, is dressed for a night out at the club. Just take a look at the decanter: black, mirrored, and adorned with holographic enhancements.

This is a bottle of Cognac meant to grab attention. There’s no denying that XO Night will stand out on a nightclub back bar. And as far as bottle service…it’s perfect for an over-the-top Las Vegas nightclub-style delivery.

In other words, this isn’t your great-grandfather’s Cognac.

Obviously, the House of Rémy Martin is aiming to alter the perception of Cognac with XO Night. Aesthetically, the bottle is clearly a departure from tradition. Further, by targeting nightlife specifically, Rémy Martin is signaling their interest in courting younger, legal-drinking-age consumers.

Cheekily, Rémy Martin seems willing to set aside tradition to appeal to the nightclub crowd. In fact, the storied Cognac house is taking a shot at changing the way people view Cognac and nightcaps. Rather than a sip intended to signal the end of the evening, Rémy Martin hopes people will choose to begin their night out with XO Night.

In terms of tasting notes, XO Night is XO, but dressed to show out at the club. Expect fruity and floral notes on the nose, and candied orange, spices, ripe plum, and roasted cocoa beans on the palate. The finish is classic XO: smooth, full-bodied, and long.

Personally, I think it’s great to see a Cognac house with nearly three centuries of history thinking about their portfolio differently. Keep an eye out for XO Night activations throughout 2024.

One of our favorite products from WSWA’s Access LIVE 2024 event in Las Vegas can save operators and bar teams time and money.

Access LIVE, the annual Wine & Spirit Wholesalers of America (WSWA) event is always chock full of notable items. However, this one in particular stood out to me and my colleagues.

Coming out of Deluxe Distillery in Belgium, Sūpāsawā Seriously Sour Cocktail Mixer is here to make lives easier.

Of course, it’s not surprising that this mixer is so impressive. Sūpāsawā is produced alongside high-quality stablemates, after all: Blind Tiger Handcrafted Gin, Mary White Premium Vodka, and Yusibi Honey Based Aperitif.

In short, this innovative mixer can replace citrus. Importantly, it’s also widely available around the world. Speaking to the core of our audience and clients, it’s available in Canada and the US. When I asked about availability in the US, I was told it’s in 30 states currently.

Operators in the UK, Europe, Australia, and many more regions should also be able to get their hands on Sūpāsawā.

So, what is this magical mixer, exactly? It’s a simple and clean stand-in for expensive and time-consuming citrus.

Deluxe’s super sour mixer is distilled water, citric acid, malic acid, tartaric acid, phosphoric acid, and succinic acid. The liquid is crystal clear, aroma-free, and an incredibly convenient substitute for lemons and limes.

Real-life Scenario

Consider the following real-life hypothetical that shines a light on Sūpāsawā’s real-life benefits.

Let’s say someone hires an operator for a catered event. Included in this event is bar service, and involves more than pouring wine and beer.

Along with a handful of calls, the client and their guests expect a signature cocktail. Well, batching a cocktail or two ahead of the event would be a smart move.

However, we all know what that means: purchasing and juicing citrus. And we also all know what else that means: labor costs for all that prep.

What if one bartender or bar back could batch a cocktail in less than five minutes? Yes, I’m talking under five minutes for the entire batching process.

That scenario is nearly identical to Deluxe Distillery’s Access LIVE 2024 situation.

Deluxe showed the convenience and superpower of Sūpāsawā at their booth via batching. According to the bartender and ambassador who prepared the standout cocktail, he added all the ingredients—including the super sour mixer—to a jug, shook it, and it was ready to go in less than five minutes.

Real-life Benefits

Does this mean you’ll never have to buy lemons and/or limes again? For the vast majority of bars, no. However, the more drinks you can make with Sūpāsawā, the more you can plan for and control the cost of citrus.

Per Deluxe, operators can expect to save 15 minutes per liter of citrus juiced. The distillery also says each bottle of Sūpāsawā represents 35 pieces of fruit an operator won’t have to purchase. On average, a single cocktail requires just 20 ml of Sūpāsawā, or 2/3 of an ounce. With each bottle coming in at 700 ml, that’s 35 individual cocktails per.

When I asked about unit cost at their Access Live 2024 booth, Deluxe said operators can expect a price of $9 per unit. People who do the math can see the benefit of getting their hands on Sūpāsawā for individual, kegged, and batched cocktails.

In terms of storage, the slim bottle can last for about two years unopened. After it’s opened, Sūpāsawā should last for up to a year. Compare that to the two- to three-day shelf life of lemon or lime juice.

Notably, using Sūpāsawā leads to consistency. Because it always tastes the same, drink consistency is improved. And, of course, using this super sour mixer leads to producing less food waste.

If we’re to take what industry pundits and cocktail aficionados are saying, 2024 may be the year that the Espresso Martini falls from grace.

Alright, that may be a bit dramatic. However, maybe we won’t read about how the Espresso Martini is having yet another “moment” this year.

Instead, it’s possible that 2024 will be the Year of the Carajillo.

This incredibly simple cocktail is receiving as muchif not morehype than the Negroni Sbagliato did in 2022. Only this time, bartenders may not roll their eyes whenever they hear someone mention it.

Before I dive into the Carajillo, a bit of clarification. I’m not anti-Espresso Martini. It isn’t like I think I’m above enjoying one of these not-Martinis from time to time. And I’m sure it makes registers ring plenty at bars around the world.

However, it seems like we’re told we’re in the midst of the Espresso Martini’s latest moment every time fall or winter comes around. Look, this is a modern classic that has been around for decades. It’s not “having a moment,” it has simply reached ubiquity.

So, the idea that a perhaps lesser-known coffee cocktail can have its moment this year is exciting. (And a bit of a relief.)

Let’s cannonball into the Carajillo!

Not So Simple

When you do a cursory search for the Carajillo you’ll encounter quite a few absolutes.

For example, there are people who say the drink only and always consists of hot espresso and Licor 43. You may read that the ratio is always one to one.

However, there’s more nuance surrounding the Carajillo.

This deceptively simple cocktail comes to us from Spain. From what I can find, it’s often a cold drink that varies from country to country, region to region. In Spain, it’s commonly coffee and brandy in a two-to-one ratio. Order one in Cuba and it will likely be a rum cocktail rather than brandy. In Mexico, while Licor 43 is said to be the standard, it’s not uncommon for mezcal or a coffee liqueur to accompany the coffee.

Now, as I’ve said, you’ll come across sources that say a Mexican Carajillo is espresso and Licor 43. So, let’s go with that recipe for now.

It’s a simple build: Fill a cocktail shaker with ice. Add two ounces of hot espresso or other hot coffee and two ounces of Licor 43. Shake until well chilled, then strain into a rocks glass. The shake should form a foamy head. Some people garnish with three coffee beans.

Make it Yours

Of course, there’s room to play with this recipe. You and bar team can change the ratio, change the garnish, experiment with glassware, replace the Licor 43 with another liqueur, add an ingredient…

As an example of the latter suggestion, Cazadores produces a coffee liqueur, Cazadores Café. This can replace Licor 43 or work alongside it.

Just know that if you replace the original liqueur, you’re missing out on a blend of 43 botanicals. That means your Carajillo will taste much different than the standard Mexican build. In that case, is it still a Carajillo?

Well, that’s up to your guests to decide, I suppose.

There are bars that make their Carajillo with cream, brandy, and Licor 43. Some serve theirs with a small bowl of sugar so guests can sweeten them to their liking.

At some bars, the build calls for heating the liqueur or base spirit with lemon and sugar. Others make Carajillos with mint and amaro.

So, you and your bartenders can do what has been done with the Espresso Martini: Alter the Carajillo to create your signature version. You can also simply serve the traditional build.

Or, and this is my recommendation, you can serve traditional Carajillos and offer one or more signature variations.

Life is Peachy with These Pantone-inspired Cocktails

According to Pantone, the 2024 Color of the Year is Peach Fuzz, which communicates warmth, community, collaboration, and a sense of welcoming.

There’s a lot that operators can do with Pantone’s annual announcement.

For those who are curious, the 2023 Color of the Year was Viva Magenta, a bold, purplish shade of red. And in 2022, the color was Very Peri, a dynamic shade of blue.

If an operator is looking for a complete venue refresh, Peach Fuzz may be an effective choice. For example, people can leverage the 2024 Color of the Year with feature walls, seating, tablecloths, and physical menus.

Of course, not every operator is looking to undergo a redesign. In this case, there’s still plenty of opportunity to splash Peach Fuzz throughout a bar or restaurant. One simple and effective way is through the drink menu.

Below are three peach-forward cocktail recipes. They’re visually appealing, which is helpful since we tend to “drink” with our eyes first. And with peach brandy, puree, or bitters, they impart more than just color: peach fans will appreciate the flavor.

You’ll also find a recipe for the Cosmopolitan, the famous cocktail created by Toby Cecchini. It turns out Aubrey Plaza, the modern face of the Margarita, is also the spokesperson for the Cosmo. Just like they say there’s no Negroni without Campari, there’s no Cosmo without Cointreau.

  • 0.75 oz. Cointreau
  • 0.75 oz. Tequila
  • 0.75 oz. Fresh lemon juice
  • 0.5 oz. Peach puree
  • 3 oz. Prosecco to top
  • Peach wedge to garnish

Prepare a Collins glass by filling it with ice. Add all ingredients except for the Prosecco and garnish to a shaker with ice. Shake well, then strain into Collins glass. Top with Prosecco, garnish with a peach wedge, and serve.

Fish House Punch cocktail

Fish House Punch

Add ice to a rocks, Collins, or other glass. Fill a cocktail shaker with ice, then add all ingredients except for garnish. Shake well, strain, garnish with lemon zest, and serve.

Peach Spritzer cocktail, also known as Greek Spritzer

METAXA Peach Spritzer

  • 1.5 oz. METAXA 7 Stars
  • 1.5 oz. Prosecco or other sparkling wine
  • 0.75 oz. Tonic
  • 3 dashes Peach bitters
  • Peach wedge to garnish
  • For winter: Star anise and tree leaf to garnish
  • For spring: Jasmine flower to garnish

For this cocktail, start by selecting a red wine glass. Add METAXA 7 Stars, then add bitters and ice. Stir, add tonic, then top with Prosecco or other sparkling wine. Garnish with a peach wedge.

Cointreau Cosmopolitan cocktails

Cointreau Cosmo

  • 1 oz. Cointreau
  • 2 oz. Vodka
  • 1 oz. Fresh lime juice
  • 1 oz. Cranberry juice
  • Orange twist to garnish

Your bartenders probably know how to make a Cosmo. But just in case, start by preparing a coupe or cocktail glass by chilling it. Add all the liquid ingredients and ice to a cocktail shaker. Shake well, then strain into the prepared glass. Garnish and serve.

One of the most influential people in the hospitality industry, Colin Asare-Appiah, is bringing a new cocktail and spirits festival to South Africa in 2024.

Asare-Appiah is, of course, a bartender and spirits aficionado. However, he’s also an industry educator, author, a mentor, and historian. And he’s driven to shine a spotlight on the cocktail scenes throughout Africa.

AJABU, which means “wondrous” in Swahili, is the creation of Asare-Appiah and Mark Talbot Holmes, the founder of U’Luvka Vodka. From March 12 to 13, Johannesburg will be the first city to host AJABU. Cape Town will follow closely, with the festival taking place from March 15 to 16.

To put it plainly, the cocktail community doesn’t seem to pay much attention to African countries. At KRG Hospitality, we focus primarily on North America. So, I have to admit that when it comes to industry coverage, I’m guilty of overlooking African countries as well.

Looking back at industry awards from the past couple of years drives this point home. Bars, restaurants, hotels… If they’re not in Johannesburg or Cape Town, they’re not earning nominations, honorable mentions, or rankings, with very few exceptions.

Asare-Appiah and Talbot Holmes are aiming to change this situation. They duo and their collaborators intend to build international connections between trade, brands, and media through this bi-annual cocktail festival.

af&co. x Carbonate: 2024 Trends to Watch

Marketing and creative agencies af&co. and Carbonate Group‘s 16th annual Hospitality Trends Report provides in-depth insight across several categories.

This is an in-depth, insightful report operators should review in its entirety. The “Sweet Sixteen” edition of this yearly report is available for download here.

There are two interesting details toward the end of af&co. and Carbonate’s report. First, a list of 2023 clients. Second, an explanation for the design of the report itself.

This makes sense: Carbonate is a creative agency that works in the hospitality space, after all. Further, af&co. is a hospitality industry marketing agency.

Now, I won’t be sharing every trend or insight found in these two agencies’ report. Rather, I’m highlighting a number of items across four of the report’s six categories. Again, I think operators and leadership team members should download the report for themselves.

Food

While af&co. and Carbonate identify specific cuisines and items that are trending, it’s their 10,000-foot view of food that I find most compelling. In terms of the big picture, “rigid” adherence to authentic cuisine is falling out of favor.

Chefs, in the agencies’ opinions, are taking a more modern approach to menus. Instead of following the “rules” of certain cuisines, they’re creating dishes and programs that defy labels. Of course, for those who feel the need to label, one could call this approach “contemporary fusion.”

Examples given are Good Luck Gato’s Okonomiyaki Baked Potato, and the Birria Dumplings at Little Bull.

Cuisine Trends

Of course, af& co. and Carbonate also zoom in on food. Their Cuisine of the Year goes to Korean.

Dessert of the Year goes to the Pavlova or Eton Mess. So, one can argue that operators should connect with their back-of-house teams about meringue-based desserts.

Other food trends include making pastries with buckwheat; getting inventive with mortadella; serving borek in snack and entree size; and Brazilian-style pizza.

However, it’s a presentation trend that stood out the most to me. Accompanied by a timeline complete with images, the agencies state confidently that we’re in the “Crescent Moon” era of plating.

Visualize a plate, then place all of the food along the edge, with roughly two-thirds of the space open. That’s the crescent moon presentation.

Beverage

A number of the trends in this section aren’t exactly new. That tells me that some are likely on the brink of moving from trend to ubiquity.

That, or they’re at risk of bumping against their expiration date.

Two trends that have been popping their fins out of the sea of cocktails for a bit make it into the af&co. and Carbonate report. One is clarified cocktails.

Spend a bit of time looking up cocktails on social media and you’ll see these are a bit divisive. Some bartenders are all for them, some appear to absolutely despise this trend. Guests, however, seem to like the novelty of well-known, opaque or translucent classic turning transparent.

Another drink trend? Culinary cocktails. For food-driven concepts, it makes perfect sense to encourage the bar team to work closely with the kitchen team. Offering culinary cocktails is one method of pulling a concept’s threads tighter, telling a more complete story.

Along those lines, the agencies identify another divisive cocktail trend: cheese.

Personally, cocktails that feature cheese aren’t my thing. However, these drinks are, at the minimum, going to grab a guest’s attention. And those who order these drinks aren’t likely to forget the experience any time soon, good or bad.

That last point is important for operators and their teams to remember. A negative experience can be more powerful and stick with a guest longer than a positive one. So, pursue trends with caution.

Hotel

One of the biggest hotel developments the Hospitality Trends Report identifies is the dual-brand hotel. This is also a trend with which KRG Hospitality is well acquainted, both through industry research and client projects.

So far, the most common approach tends to include two towers, a shared lobby and fitness center, and shared F&B concepts. However, there are properties that incorporate not only brand-specific design for each tower but separate the bars and restaurants as well.

Notably, Marriott opened the first-ever tri-brand hotel in Nashville in 2019. The hotel and resort colossus combined an AC Hotel, a Residence Inn, and a SpringHill Suites.

Another interesting hotel trend? Eco-friendly, pre-fab construction. An excellent example of this approach is Moliving. To learn more about this brand, check out Bar Hacks podcast episode 68 with Jordan and Hanna Bem.

Interest by consumers in supporting eco-friendly brands informs two other trends identified by af&co. and Carbonate. One of these is hotels and resorts including e-bikes among their amenities.

Another is rewarding guests for engaging in a number of green initiatives. For example, cleaning up the beach in front of a hotel, or helping to plant trees on or near the property.

Speaking further of amenities, hotel and resort operators are likely aware that if they have courts for racquet sports, they need to include pickleball.

Design

Operators considering a refresh or starting from a clean slate for a new space may want to work with a designer on the following approach: maximalism.

According to the 16th annual Hospitality Trends Report, this bold, playful design language is on the rise. Following this trend, af&co. and Carbonate think that maximalism is working particularly well for “concept-driven, design-forward” bars.

As far as colors and materials operators may want to ask designers about, the agencies suggest pink, bronze, gold, and velvet. These colors are warm and welcoming, exactly what a hospitality venue should be.

DoorDash Names 2023 Global F&B Trends

As we get close to winding down 2023 and welcoming 2024, DoorDash takes a shot at identifying the global F&B trends to watch.

This is an exciting and insightful time of year for our industry. In the last quarter, different sources start publishing their data-backed F&B predictions for the year ahead.

Take, for example, Technomic’s Global, Canadian, and American trend predictions for 2023. Oh, and don’t worry—we’ll be taking a look at their predictions for 2024 soon.

Today, however, we’re checking in on DoorDash. Admittedly, I’m not the biggest fan of third-party delivery. It’s no secret I favor direct delivery for operators.

There’s no denying, though, that third-party delivery companies have access to valuable data. From the top food and drink orders to the dayparts seeing the most delivery and pickup order growth, they can help operators see shifts in consumer behavior.

So, I’m happy to take a look at what food trends DoorDash thinks operators should watch moving forward.

Before we jump in, I’m happy that DoorDash includes this cautionary statement in their article: “Finally, always consider whether or not a trend actually fits in at your restaurant.”

At KRG Hospitality, we couldn’t agree more. Jumping on every trend, as tempting as that may be, is unwise and can do harm than good. So, while the lists below identify trends that are gaining traction currently, operators need to be discerning.

Food Trends

Let’s start with a trend multiple sources identified toward the end of 2022 that appears to still be on an upward trajectory: pickles.

Seriously, it seems that people can’t get enough pickles. Pickle pizza appears to the current darling when it comes to this food trend. Speaking of pizza, DoorDash sees square pizzas as a trend to watch.

Another trend that multiple sources have been keeping tabs on is chimichurri. According to DoorDash, this condiment is finding its way onto all manner of food item.

Other food trends that operators should be aware of are bowls (deconstruct a sandwich, burrito, etc., and you have a bowl); oyster mushrooms subbing in for meat; higher-end tinned fish; and gluten-free menu options.

To be honest, I don’t think that last one is just a trend. At this point, offering gluten-free options or entire menus is mainstream.

Now, there are two more food trends I want to address separately. One, smaller menus. This is a trend I believe most operators can and should get behind. Shrinking a menu can result in lower food and labor costs, and a happier team. Making a menu smaller can also make a restaurant more nimble and engaging as LTOs may have more impact.

And then there’s aburi sushi, which is presented after the top of the fish is torched. This gives sushi a smoky flavor and brings in a different texture element.

To be fair, I’ve expected this to take off for the past several years. Now, it appears it’s taking hold and moving from fad to trend.

TikTok Trends

Yes, we have to talk about TikTok. There’s no question that the platform is a trend-producing powerhouse.

Clearly, TikTok has an influence on food trends. If you want to know what your younger guests want to try, check TikTok. The same goes for your guests who are highly engaged with social media influencers.

Below, the trends DoorDash sees taking hold.

  • Chopped sandwiches. Do you have sandwiches on your menu? Can your guests watch as your team makes them? You may want to create a chopped version of your signature or best-selling sandwich.
  • Pasta salad summer. Apparently, this summer was the Summer of Pasta Salad. Specifically, pasta salads made with fresh ingredients, and made without ingredients like mayonnaise.
  • Cottage cheese. According to DoorDash, TikTokers are putting cottage cheese in scrambled eggs, adding it to pasta sauce, and using it to make cheese toasts. I’ve personally tried the TikTok trend of using cottage cheese to make nacho cheese sauce.

One word of caution: TikTok trends come and go in the blink of an eye. So, operators need to hop on trends that work with their restaurant or bar before they’re already out of favor. It’s a daunting task.

For the second time in its brief but exciting history, Mr. Black Espresso Martini Fest is coming to bars throughout America.

Last year, 70 bars in eight cities across the US took part to celebrate the Espresso Martini. This year, participation more than doubles.

Fourteen cities in ten states will play host to more than 200 bars during the fest. For 2023, Austin, Boston, Dallas, Denver, Nashville, Phoenix, and Seattle are joining in on the fun.

I, for one, expect Espresso Martini Fest to have the same staying power as other cocktail celebrations. The inaugural event took place in 2016 in Australia. In 2018, the Fest spread to the UK. After launching in the US, the week-long event growth has doubled over the course of just one year.

Logically, Mr. Black Espresso Martini Fest should join the ranks of Negroni Week, Old Fashioned Week, and Bee’s Knees Week.

Now, I know I’ve called the Espresso Martini “the cocktail that won’t die.” And yes, I’ve pointed out that it’s not technically a Martini, and that many bartenders hate it for the time it can take to make. That doesn’t mean participating in Espresso Martini Fest is a bad idea.

This is a cocktail that guests enjoy. It’s a drink that generates headlines each year. And clearly it’s a beverage that can drive traffic and generate revenue. At the end of the day, participation is a smart move.

2023 Espresso Martini Fest Cities

Given that the Fest runs from October 9 to 15, it’s unlikely the organizers are still vetting venues for participation. However, at the time of this article’s publication, the portal appeared to be open. It’s a worth a shot if you want your bar to join Espresso Martini Fest!

At least you’re aware of the event now so you can prepare to sign up next year.

Listeners of our Bar Hacks podcast will recall that Novo Fogo founder and CEO Dragos Axinte was our guest for episode 97. It’s on this episode that Axinte discusses Novo Fogo’s partnership with Sophie Hawley-Weld and Tucker Halpern, known globally as SOFI TUKKER.

The Novo Fogo and SOFI TUKKER teams may have known deep down that the partnership was right but they took the time to prove that feeling was good for business and a long-term relationship.

In addition to SOFI TUKKER serving as global ambassadors for Novo Fogo, Hawley-Weld and Halpern are also co-owners of the Brazilian brand. The dance music duo was heavily involved in the development and launch of Drinkee.

For 2023, Negroni Week hosts Imbibe Magazine and Campari are raising funds for Slow Food. Sponsors also include Cinzano, Bulldog Gin, Bols Genever, and Coopers’ Craft Bourbon.

Negroni Week will take place from September 18 through September 24. Registration is now live and operators can sign up their bars via this link.

So, we’re helping spread the word early and giving operators and their teams plenty of time to prepare to participate this year.

Negroni Week 2023

After first launching in 2013, Negroni Week is celebrating their decennial year.

Over the course of ten years, Imbibe and Campari have seen tremendous growth and results. In its inaugural year (or perhaps inaugural week is more accurate), a little over 100 venues participated. In its second year, 1,300 venues registered for Negroni Week.

Now, thousands of venues sign up every year, helping to raise money for worthy causes. To date, Negroni Week boasts more than $4 million in funds for charitable organizations.

Participation really couldn’t be any simpler: register, make a donation of at least $25, serve Negronis and/or variations of Negronis, and donate proceeds from your Negroni Week LTO menu.

After completing registration and making at least the minimum donation, an operator’s venue will gain placement on the Negroni Week website. The listings are searchable by state and city. Venues that donate $250 or more will carry a Premium Donor designation.

Slow Food

Simply put, Slow Food’s mission is to help everyone access food that’s good for them, good the people who grow it, and good the planet as a whole.

An even more succinct description comes from the Slow Food website: access to food that’s “good, clean, and fair for all.”

Further, Slow Food seeks to prevent the loss local food cultures, along with food traditions. The organization was founded in 1989 and is now active in more than 160 countries.

In the US, Slow Food operates as a 501(c)(3) organization and has been active in Canada for several years. The charitable organization has had a strong presence in the provinces of British Columbia, Calgary, Montréal, and Ontario.

Get Ready

With just three ingredients in a 1:1:1 ratio, any bar team should be able to handle putting delicious Negronis across the bar.

So, operators should ensure their team can craft a traditional Negroni while encouraging them to work on some creative variations.

We agree that demographics are a metric that people and businesses often misuse. Valuegraphics can be far more effective for businesses looking to build loyalty and boost revenue.

Still, demographics can provide beneficial insights.

First, let’s look at how men and women used iPourIt systems in 2022. Men poured 20,477,288 ounces last year, whereas women poured 10,848,435 ounces. The average per pour for men was 6.4 ounces in comparison to 5.3 ounces per pour from women. On average, men spent $14.72 per visit to an iPourIt-equipped location; women spent $12.24.

Next, the generational breakdown. IPA was the number-one style poured for Baby Boomers, Generation X, and Millennials. For legal-drinking-age Generation Z drinkers, IPA came in second; their top pour style was cider. Likewise, Lager claimed second place for Boomers, Gen X, and Millennials. Second was IPA for Gen Z, and Lager was third. Wheat beer was third place for Boomers, fourth for Gen X and Millennials, and fifth for Gen Z. Sour came in fifth for Gen X and Millennials fourth for Gen Z; for Boomers, the style didn’t rank among the top five. Stout clinched the fifth spot for Boomers.

Finally, in terms of traffic, men of every age group poured more ounces than their female counterparts.

The What

Below, the top 10 styles of beer poured by men:

The Where

The 2023 Pour Report by iPourIt breaks the US down into five regions: West, Southwest, Midwest, Southeast, and Northeast.

Because our American head office is in Las Vegas and our hotel consultant is in Pennsylvania, we’ll look at the West and Northeast.

The top-five pours for the West in 2022 were:

Just before Tales of the Cocktail kicks off, Novo Fogo Organic Cachaça announces the reformulation of their award-winning ready-to-drink cocktail line.

As founder and CEO Dragos Axinte reveals on episode 97 of the Bar Hacks podcast, the RTD series now features key changes.

For example, the RTDs now come in 12-ounce slim cans rather than their original eight-ounce cans. As you can see, the design is also much more colorful and eye-catching.

Of course, the changes aren’t simply cosmetic. Inside the can, each expression represents a new recipe. The last iteration of Novo Fogo RTDs was delicious and showcased their Silver Cachaça brilliantly. However, the new formulation offers even more robust flavor and drops the sweetness a bit.

People Aren’t Done ‘Improving’ the Negroni

It’s possible the infamous Sbagliato Negroni is just the opening salvo from bartenders hell-bent on taking on the traditional specs and build techniques.

Two “new” versions appear to be getting attention now. One is essentially a reverse cocktail. Additionally, it’s likely only really a “new” drink to North Americans.

The other, well, it’s something else entirely. Let’s take a look.

The Mariano, a.k.a the Marianito

This is the Negroni cocktail that’s probably new only in the sense that many North American drinkers are just now hearing about it. In Northern Spain, this is a go-to summer cocktail.

It’s also, like many reverse cocktails, low-ABV and therefore rather sessionable. Further, the Marianito is an excellent ambassador for aperitivo culture.

To be fair, we probably shouldn’t be so reductive and refer to this cocktail as a Negroni riff. So far, I’m unable to uncover the story of its genesis, so I don’t know if the Negroni even inspired the Marianito.

After doing some digging, though, the Marianito apparently first appears in print in 1989. However, some people believe the drink likely traces its origins back to the 1950s. There are also two prevailing origin stories that focus on the name because…of course. This is how so much of cocktail history goes, and I love it.

One story is that “Mariano” is a portmanteau that combines the names of the most popular vermouths in Spain: Martini and Cinzano.

The other story? A waiter who drank little glasses of vermouth (often with a splash of gin or Campari) fell in love with the daughter of someone named Mariano. She didn’t feel the same way, locals in the area found, and they referred to his little drinks as “Marianitos,” after his father-in-law who never was. Not very nice, but alright.

At any rate, the Marianito is a popular summer cocktail. It’s also a year-round drink for many in Northern Spain. Particularly, apparently, in the port city of Bilbao. It’s also a cocktail that is often riffed on, so it lends itself to experimentation.

A Marianito Recipe

Notice this says “a” recipe, not “the” recipe. I’ve come across a few different builds claiming to be the “right” specs.

Some people add 50ml of sweet vermouth, some add 75ml. There are builds that call for vermouth rosso, and those that call for sweet vermouth.

That tells me one thing: bars in Northern Spain like to try and make the Marianito their own. So, experimentation is encouraged.

However, try the specs below before playing around with your Marianito:

  • 75ml Sweet vermouth
  • 15ml Campari
  • 15ml Gin
  • 2-3 dashes Angostura bitters
  • (Optional) 15ml Pomelo juice
  • Orange twist and an olive to garnish

The Sushi Rice Negroni

This…is exactly what it sounds like. When building a classic Negroni, you add sushi rice when mixing it.

The theory is simple enough to understand: sushi rice “softens” the flavors of other ingredients. So, adding sushi rice to your build should soften or “round out” the flavors of your Negroni.

Before we get too far, no—the rice doesn’t end up in the glass.

For this technique the bartender adds anywhere from a few grains to two tablespoons of cooked sushi rice to a mixing glass. After that, the build is the same as the standard cocktail, including the final step: straining into a glass over large ice cube.

Interestingly, bartenders can play with using uncooked or cooked sushi rice. Theoretically, this would adjust how much “softer” the drink turns out. And, of course, proponents of this technique say it can be beneficial to cocktails beyond the Negroni.

However, at the moment, it appears that the Negroni once again finds itself as the subject of experimentation. I can only imagine what else bartenders will subject it to before the year’s end.

Temperatures are rising and people are socializing, so Cointreau wants to make sure you and your team make Margaritas right.

In fact, they’re so serious about Margarita specs that they’re partnering with Aubrey Plaza educate the public. To celebrate the 75th anniversary of the Margarita, the iconic brand is launching the MargaRight campaign.

Challengers come and go but so far, the Margarita is the top cocktail in the US. This has been the case for many, many years. Of course, it’s also a popular cocktail around the world and has been number one in other countries as well.

Now that we’re a week away from the “official” start of summer, it’s paramount to make sure your Margaritas are MargaRight. For one thing, it’s the perfect summer sipper. For another, people are eager to socialize in restaurants and bars, and the Margarita is sure to join groups of friends as they hang out together.

But there’s another reason to ensure your Margs are on point: The wrath of Aubrey Plaza. More accurately, avoiding incurring Plaza’s wrath for putting MargaWrongs across your bar.

Margarita mix? Anger. No Cointreau? Fury.

To borrow a refrain from fanatics of another classic cocktail, it’s safe to say that Plaza would agree with, “No Margarita without Cointreau.”

The Original Margarita

Some, including Cointreau, support the belief that the Margarita’s creation traces back to 1948. For this origin story, Dallas socialite Margarita Sames is either the inventor of the Margarita or asked for a signature cocktail for a party she was hosting at her Acapulco home. Going further, another claim is that Tommy Hilton was a party guest and brought the recipe to Hilton properties, helping to make it famous.

Another claim is that the Margarita is simply a logical evolution of the Daisy. The mid-1800s tipple has a cocktail family named after it, and the Margarita, Sidecar, Cosmopolitan, and Daiquiri sprang forth from it.

Regardless of what origin story you choose to believe, Cointreau champions the original recipe: Cointreau, blanco tequila, fresh lime juice, and a lime wheel to garnish. It’s this classic recipe that Cointreau and Plaza are adamant about for the MargaRight campaign.

Ingredients:

  • 1 oz. Cointreau

If you want to craft an incredible $3,500 Mint Julep, the first step is to acquire one of 50 Woodford Reserve gold Secretariat Julep cups.

Now, should $3,500 seem a “bit” exorbitant, you can also opt for one of 100 silver Julep cups for $1,000.

Cup in hand, simply fill it with crushed ice and pour a refreshing Mint Julep over it. Et voilà—a delicious $3,500 or $1,000 Mint Julep!

Okay, so you’re probably wondering what I’m on about. Am I really suggesting you craft thousand-dollar-plus cocktails? I mean…if you have guests who’ll pay that much, yes, I am.

In reality, however, I’m making you aware of this year’s Woodford Reserve $1,000 Mint Julep™ charity program. This program is a longstanding Kentucky Derby tradition.

For 2023, the $1,000 Mint Julep™ will benefit the Secretariat Foundation. That makes sense given that this year marks the 50th anniversary of Secretariat winning the Derby.

In keeping with this year’s theme of celebrating Secretariat and supporting the horse’s namesake charity, each features blue and white checkered silks in sapphires. The 2023 Mint Julep cups are handmade by Louisville, Kentucky jewelers From the Vault.

People who choose to support the charity via purchasing the gold cup will have their name engraved on the bottom of the cup. These cups also come with the autograph of Ron Turcotte, Secretariat’s jockey.

Secretariat’s Mint Julep

Alright, so let’s be more realistic. Only 150 people are going to splash out for the $1,000 or $3,500 Secretariat Mint Julep. And while supporting a charity like the Secretariat Foundation is a great thing to do, people are struggling.

So, below you’ll find the recipe for the Mint Julep variation that those attending the $1,000 Mint Julep Experience will be enjoying. It’s up to you if you want to offer it on Derby Day to raise funds for the Secretariat Foundation or a charity of your choosing. It’s perfectly reasonable to simply offer the refreshing cocktail as a Derby Day LTO.

Pack a Julep cup with crushed ice, making sure to make a dome over the lip of the cup. Add the whiskey and liqueur to a mixing glass and stir. Pour over the prepared cup. Garnish with one sprig of mint and one stalk of Virginia bluebells.

Should you prefer a more traditional build, express the oils of a mint leaf inside the cup. Add the bourbon, chestnut liqueur, and crushed ice. Garnish with more crushed ice, mint, and Virginia bluebells, then serve.
